"French fried potatoes

Wash and pare the potatoes and cut into fairly narrow and fairly thick
strips about 1/4 inch thick. After soaking in cold water for 1 hour remove
and dry carefully before frying. Fry as for Saratoga Chips."

From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
