"Celery and Cheese savoury

Ingredients

1 head Celery
1 Tablespoon butter
1 Tablespoon flour
1 Breakfastcup Milk or 1/2 cup milk and 1/2 cup Celery water
1 Teaspoon Lemon juice
4 heaped Teaspoons Grated Cheese
Pepper and Salt

Wash celery and cut into one-inch pieces. Cook in boiling, salted water
for 15 minutes. Melt butter in saucepan, add flour, and gradually add
liquid, stirring all the time. Boil 5 minutes; add seasonings, 3
tablespoons of cheese and drained celery. Pour into a pie-dish, sprinkle
remainder of cheese on top, and brown under griller or in a hot oven."

From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
