"Beetroot
(To serve)
Slice cooked beetroot into a bowl. Dissolve about 2 tablespoons of sugar
in a little boiling water, add pepper and salt to taste, add about 1/2 cup
of vinegar and water mixed. Pour over beetroot, and serve when cold with
cold meat, salads, etc."
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
