Irish Pizza Bread

Ingredients
2 Cups Flour
1 level Teaspoon Baking Soda
1 level teaspoon salt
1 Cup buttermilk
Instructions
Put flour, baking soda & salt into a large bowl, mix well. Make a "well"
in the middle of the dry ingredients and pour the buttermilk into the
mixture. Mix the dough together well, by hand. Turn out the dough onto a
floured board. Shape into a round ball gently and don't knead it. Turn the
dough ball over to lightly coat with flour on the top & bottom.
Put dough onto a floured, flat baking tray. Cut a cross on the top of the
dough from side to side across the centre (important so it can rise in the
centre), then prick the four quarters, once each, with the point of the
knife (allows "the fairies" to escape it was said). This makes a standard
Irish Soda Bread loaf.
Bake in an oven for 10 to 15 minutes at 430 degrees Fahrenheit (230
degrees Celsius). The crust should be firm on top & bottom when baked. If
the centre is too soft, use a lower temperature and longer cooking time in
future.
"Irish Pizza"
Make a ball of dough as above. Roll into a flat pizza shape to fit a
shallow tray or baking sheet. Apply olive oil to one side of the rolled,
flat dough. Place oiled side down on the tray or baking sheet. Apply
toppings such as sweated onions, anchovies, blue cheese, chopped rosemary,
bacon pieces etc.
Bake in an oven for 10 to 15 minutes at 430 degrees Fahrenheit (230
degrees Celsius).
