Hints
Unless vegetables are cooked carefully, much of their food-values
are lost. Throwing away the cooking water wastes valuable mineral
salts and vitamins.
Use as little water as possible and always put a lid on the
saucepan.
Use vegetable water to make soups, stock, gravy and sauces.
Use the vegetables as fresh as possible.
Wash the vegetables thoroughly, and avoid soaking where possible."
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflower and jelly crystals.
