"Roast Vegetables

To Bake or Roast

Suitable for Potatoes, Carrots, Parsnips, Marrow, Pumpkin, Onions and
Turnips.
Peel and cut vegetables into pieces (if small, leave whole). Sprinkle with
salt. Roast in hot fat around the joint or in a separate dish in a
moderate oven. Time, about one hour. Parsnips, when old, are improved by
boiling for five minutes."

From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflower and jelly crystals.

Maybe there is a newer way that cuts the fat & salt?
